Chia - Lucuma
Organic, Gluten-free & Vegan!
Lucuma is one of the upcoming new super foods! Not only is it packed with nutritional benefits but this fruit powder also comes with a delicious taste. Lucuma is a natural sweetener that doesn’t increase your blood sugar levels. For each serving, lucuma contains 2.3g of fibre, 4g of protein and 14 essential trace elements, including a considerable amount of potassium, sodium, calcium, magnesium and phosphorus. Its delicate and unique caramel flavour is even the most popular flavour of ice cream in Peru, its country of origin, beating out chocolate, vanilla & strawberry.
- 1 cup of Brazil-pumpkin nut milk (See recipe below)
- ½ cup of coconut milk
- 1 fresh or frozen banana
- 3 heaping tbsp of raw lucuma powder
- 1 tsp of black chia seeds
- 1 tbsp of ground vanilla
- 1 pitted Medjool Date
- ¼ tsp of ground true cinnamon
1/ Add all of the items into the blender, mix and enjoy!
Raw Unsweetened Brazil & Pumpkin Milk
- ¾ cup of Brazil nuts
- ¼ cup of Austrian pumpkin seeds
- 5 cups of water
- 1 whole vanilla bean
1/ Soak the Brazil nuts and pumpkin seeds in water for 4 hours. Discard steeping water and rinse.
2/ Add the nuts, seeds and vanilla into the blender with 5 cups of water. Mix for approx. 1 minute.
3/ Filter the mixture through a nut milk bag and squeeze to extract as much milk as possible.
This milk can be preserved in a Mason jar in the fridge for up to 4 days. Shake well before using. The nut to water ratio described above can be used with the nut and/or seed of your choice! Use your imagination!
