Chabichou:

The Strongest Goat in the Loire

The Chabichou is a natural-rinded cheese that comes from the Loire Valley, home of the majority of French goat cheeses. This fresh aged goat has been protected by the AOC label since 1990, and its production can be fermier, cooperative, or industrial.

The thin white rind, with its yellow and blue mould, conceals a cheese with a distinct aroma and a very pronounced to even sharp flavor. Even more so than most goat cheeses.

Chabichou is delicious with the lively, fruity red wine of the Neuville-de-poitou, Dissay, and Saint-martin-la-riviere regions.
