A Winter Salad Using the Most Local of Greens
Winter Micro Greens Slaw
With Tahini Orange Vinaigrette
1 large carrot, peeled and grated
1 large parsnip, peeled and grated
1 cup shredded red cabbage
1 cup of assorted micro greens
(kale, daikon, sunflower & arugula)
Toss together in a bowl and add dressing.
1 orange, peeled and cut into 4 wedges
1/2 cup cold pressed olive oil
1/2 cup apple cider vinegar
1 tbsp tahini
1 tsp minced ginger (optional)
2 tsp maple syrup
pinch pink Himalayan sea salt
Blend all ingredients in a blender until creamy and mix into slaw.
Garnish with micro greens and sprinkle with black and white chia seeds.
