The Law of Breakfast

Thou Must Eat It

My daughter suggested that if I had my own religion, eating breakfast would be one of its tenets.  This was an astute observation.  Don’t tell me that you’re not hungry, you’re not a morning person or that you don’t have time.  I will have none of it.     

Given my views, it is not surprising that I am willing to put some effort into finding interesting things to eat for breakfast.  I do this so that you don’t have to.  In November, I wrote about dinner ideas and I got such a great response that I decided to do it for breakfast.  This is not about Sunday brunch, it’s about everyday breakfast.  Below are some of my best breakfast ideas, and where you can find the recipes.  My favourite breakfast book is Whole Grain Mornings by Megan Gordon, who is also the author of asweetspoonful.com.  But read on for some other suggestions.   

Stuff on Toast.  I eat wholegrain toast with peanut butter and jam more often than anything else but sometimes we all need to change it up.  Avocado toast is trendy, sure, but I’m not sick of it yet.  Sprinkle with lemon juice, salt and pepper and you’re good.  Add an egg and you’re even better (see pinchofyum.com) and for more ideas, thekitchn.com.  For something different, try Broiled Citrus & Ricotta Toast from sunday-suppers.com.  If you’re willing to go all in with a cookbook, I loved Toast: The Cookbook by Raquel Pelzel (2015).

Oatmeal.  This is a solid, nutritious breakfast.  You can make it ahead, it will last for days and be ready in minutes.  There are many creative ideas for flavours and toppings, but have a look at food52.com, fannetasticfood.com and sparkpeople.com.  I really like Heidi Swanson’s Baked Oatmeal, on epicurious.com.  Play with the ingredients to suit your taste and dietary preferences.  

Baked goods for breakfast?  Yes, Virginia, as long as you do it right.  My favourite sites for fun but nutritious baked goods are smittenkitchen.com and asweetspoonful.com.  Try Blue Sky Bran Muffins, Breakfast Crisp and Blueberry Breakfast Bars.  

Granola.  I make my own granola, partly because of allergies, and partly because most granolas are too sweet.  My favourite flavours are chocolate and ginger, but there’s nothing boring about vanilla.  My go-to recipe is Vanilla Scented Granola on bonappetit.com and I also like sallysbakingaddiction.com.  It’s easy to add variety by using different grains, nuts and spices, sweeteners and oils or to make your granola gluten-free or nut-free.  For breakfast on the go, try the granola bars on minimalistbaker.com.       

More:  Homemade, whole grain pancake mixes that you keep in the fridge, breakfast sandwiches that you make ahead and freeze, and warm breakfast bowls that you can make with leftover grains like barley, farro and millet.
